Chink is racial slur for Chinese people and sometimes Asians in general.   Chinese immigrants were common in the fish processing industry at the turn of the 19th to the 20th centuries.  The device is  machine to clean and process fish for canning so it was patented and sold as the "Iron Chink"  to imply it could replace numerous Chinese workers.  It does the work of the " Chinks"
