    I never knew these things were so meaty and big.

    I pictured some really thin tissue with loads of gristle.  Leave it to the Southerners to come up with a gourmet dish for this.

    I think the name should be changed in honor of our President.

    It looked  GROSS in the uncooked raw version Sharon. The cooked version doesn't look much better. I 'd have to be two sheets to the wind to try it. Thank you for your reply and the photo! Bon Appetite! :)

    Perhaps not, but go to places like Jamaica and Trinidad and Tobago, and you can eat a dish called cow foot. They don't call it cow hoof.

    Well, I will be a STU and say, COWS DO NOT HAVE FEET.  Regardless what the Jamaicans call that dish.  

    But now you answered my thoughts.  I wondered what they cooked.  So, they cook that keratin hoof?  GROSS. It will be jelly.  With no flavor.  They must take the beef and add the flavor to that.  I'm sure they figured out some tasty thing that I don't really want to think about regarding the ingredients.  Let's see....

    I learned something.  This is not the hoof, this "foot" reference.  It is the heel of the cow. Right before the hoof in the back, I guess.

    If you look at the recipes, there are beef chunks in the soup.  That is the heel and it is said to be delicious.  

    Cow heel soup (soup made with the heels of a cow) is one of the most loved soups in the Caribbean. Hearty and always filling. It is cooked with yellow split peas, some vegetables and of course dumplings.

     

    Cow heel is sold in almost all markets and supermarkets in the Caribbean. Depending on where you are, you might only be able to get this delicacy from your butcher.

    My wife is from SVG (St. Vincent and the Granadines) and she makes it, as does my co-worker from Jamaica. I've had it several times and it's delicious.

    I've only seen them as dog treats.

    I've never tried Pork Rinds.
    Just the word "rinds" turns me off.
    Maybe if they were called Pork Chips.  LOL
