Those jousters were not very likely to have been obese, because diets in Mediaeval times were more limited and people had to be physically more active just for everyday life, let alone keeping themselves literally fighting fit. (Jousting was a martial art and training, after all.)
The horses were bred for strength and I don't think the armour was as heavy as you quote.
