My neighbor had that problem. Our homes here are built of concrete block base and the stuccoed on the outside. Inside thin strips of wood are attached to the concrete block on which to attach the dry wall. When my neighbor got ready to replace the kitchen cabinets he could not get them to attach to the small strips of wood. He had to remove the drywall, frame in some 2x4s, re-sheetrock, then hang the cabinets.
I don't know if that's a similar problem but it's doable, just a pain, money, and time. Good luck friend.
Studs are there. Old studs aren't level. Dry wall not level. Filling in uneveness with drywall gunk. Should have leveled out old studs. Didn't. Ridiculous. Typical.
I don't think I would have done it that way. But, it might end up looking better than you think it will. If you see the cabinets from the side it might be obvious.
Oh yeah, they're licensed. Actually have used them before.
It is more like filling in around the cabinets so all edges meet, particularly countertop backsplash. "Building up the drywall". More cosmetic than structural. Imagine filling in an impression or indentation in the wall to even it out.
Yeah, might end up looking ok. I see what they're going to do and it makes "sense". Supposedly they've done it before in old shi**y homes.
But still, they should have done it properly since they had the opportunity. Too late for that now unless literally starting over and I don't want to go through it.
Just have to fight over pricing.

I do hope the result is good because I know this stuff is expensive. Stay strong on the money. I want you to feel happy about it when they are finished and you are a bit less wealthy. :)
