If you remove the flesh and pour vodka in there, I promise you that you will become MORE creative because your inhibitions will be at a low and you will just go with the watermelon flow.
As far as picking out a good one? You are right. Season is the best bet and a good store, I guess.
I buy twin mini watermelons from Costco around $6 I think. Easy to cut and delicious too, I usualy cut it into small cubes and store it in fridge. Our dessert is only fruits...;))

Id tie a bunch of peoples hands behind their back, and give them each a half an open watermelon. Then I would see who could shove there faces in and eat it the fastest. The winner would get to buy me dinner.
