I eat a lot of salmon. Is there any tasty things to do with the skin?
Haven't eaten flesh for over 30 years,
but when I did I liked salmon grilled, the charred edges of crispy skin were delicious, basted in butter and lemon.
Or poached in white wine, olive oil, rosemary, black pepper and a touch of salt,
served sprinkled with roasted black sesame seeds.
Served with a fresh green salad with garlic vinaigrette and sliced ripe tomoatoes.
I suppose you could bread and fry it, but most people just toss it. (I love Hartfire's recipe, though.)
I deep fry them like pork rinds and serve them with a lemon grass-dill dip
Eat them with the rest of the fish. Yum!
Descaled first?
Seafood is the only flesh I eat. I was full vegetarian for about 10 years.

Leave it on and flavor it. Crisp it up and make sure it has something you like, lemon, olive oil, salt, pepper, hot pepper, whatever strikes you. BUTTER?? BUTTER? BUTTER?
And there is nothing wrong with enjoying it. Most people do not eat the skin. I do. I like it.

I should add that there is a nice layer of fat right under the skin before the flesh. So, that is FLAVOR. It is good to cook salmon skin on, at least ONE side.
I tried that today. Very messy with scales flying every which way.
