Some ethnic groups seem to be better at certain sports or achieving certain goals/successes than others. Is it due to physical ability, mental acuity, or culture?

Canadians are the best ice hockey players. South Americans are the best at soccer. The French are noted for their fine cuisine.  German scientists who came to America were the brains behind many American scientific advances/achievements.  Italian operas are very different from those of German composers . Why?
