Some folks will not eat leftovers. I assume they get dumped. There's just the two of us. What I do is leave enough for a light meal or snack for both of us and freeze the rest till another time. Sometimes if its a big pot of soup I share it with our neighbors.

Any leftovers here rarely last more than 2 days.  The only leftovers in my freezer are a few waffles (I always double the recipe when I make waffles so i have a few left for other times).
I've never liked leftovers.  Possibly because I dislike the same thing over and over.  For example, pizza is ok one day, 2 days is pushing it and 3 days is just plain gross (we're talking homemade pizza.  I never buy or order pre-made pizza - although if someone else wants to I'll eat it).
I rarely dump out food.  To me, that's just wasting money and resources (yes, I turned into my parents .... long ago).  If I can't eat all of something  before it'll spoil, I won't cook that much of it to start with.

In other words you are DISCIPLINED when you are in the kitchen. I'm not. I cook from my heart not my head. Maybe one day? Thank you for your thoughtful and informative reply Shuhak and Happy Tuesday!  :)
