Other than canned tomatoes or canned corn I don't do cans veggiewise. You? Oh one exception. Canned edamame beans. I toss 'em in soups for extra nutrition.

Depends on what I am making.
I make a veggie soup with lipton oinion soup mix, garlic, hamburger, tomato sauce, corn, sweet potatos, carrots, white potatos, and peas. (If you like tomatoes it is good with diced stewed tomatoes) All veggies from a can.

Now for a roast or by themselves I want fresh.

And Bushes baked beans these are great from the can.

When I was young the only spinach we ate came from a can... and I loved it! (much to the annoyance of my siblings).  In fact, back then nearly all our veggies came from the garden or a can (corn, green beans, peas, and applesauce).  Fresh store bought produce was expensive in comparison, and hard to come by.

These days I don't like canned veggies.  The only ones I use any more are tomatoes (technically a fruit)... and I'm not fond of them (I'm not a tomato lover to start with), and refried beans (instant "gut-bombs" when I'm short on time).  Instead, I use mostly fresh or frozen veggies (broccoli, cauliflower, brussels sprouts, corn, etc.) and they're always steamed.  I have canned peaches on hand for emergencies (power outages, snowstorms, etc.), but I tossed out all other canned "emergency veggies" back in 2014 (since their expiration date was 2006).

I always check expiration dates. We love beans and eat a lot of them. Some canned (refried pinto) some I cook from scratch (garbanzo, black, lima, Great Northern). I buy tons of fresh veggies at the market depending upon how fresh they and also how pricey. Some weeks we have a lot some weeks not so much. Eat mostly veggies beans whole grains nuts and seeds and you are very unlikely to have a weight problem or any ills. Thank you for your reply Shuhak. Never tried canned spinach. Just the thought creeps me out! Different strokes. :) This post was edited by RosieG at November 12, 2019 8:26 AM MST
