We LOVE cheese m2c. We like the EXTRA SHARP WHITE CHEDDAR best in Cheddar. The mild or medium aren't as tasty to us as the SHARP or EXTRA SHARP. Tillamook or Cabot or really any brand. But we love Brie Camembert Blue Roquefort Swiss Jack Pepperjack Mozzarella Cream Cottage. I think we never met or et a cheese we didn't like! I have never smelled Limburger but it's supposedly really STINKS! I don't know if I could get beyond the smell to taste it. There are some cheeses I don't dive into immediately. I guess depending on what I'm more hungry for. Some folks don't eat any dairy at all. I think vegans eat no animal products. I could never do that. I LOVE cheeses and have you ever tasted GREEN TEA ice cream or real true honest-to-goodness AUTHENTIC SPUMONI?
I'd advise that you take a taste. It doesn't taste at all like any tea. I guess there is some green tea in it but I only tasted a heavenly unique taste that I just adored. You know when you put on a fragrance (if not overdone) how delightful it is to inhale? Well I'd describe the taste like eating perfume but that doesn't really describe it either. I used to love Jamoca Almond Fudge that Baskin Robbins sold. It was coffee ice cream with ribbons of fudge running through it and almonds. For years that was all I ever ordered. But I also have enjoyed Coconut Ice Cream and Pistachio Ice cream (I think Ben&Jerry make a Pistacio Pistacio that isn't green. It's delicious and loaded with pistacios.) I also love ice cream. I may try it sometime and let you know. I love pistachio pudding and ice cream. But there are some I just do not like. Coffee or coffee flavored anything is one.
But I think to answer your question in a different way, the cheeses that I find myself most drawn to and use frequently because I love cooking would be Feta, followed by Parmesan, Romano, Asiago, Cottage, Ricotta, Cream cheese, Blue, Muenster, Provolone, and Mozzarella cheese In no specific order). Each Cheese has a specific use, place, and time in various recipes.
For example, Cream Cheese for Cheese Cake, Ricotta/Cottage Cheese for Lasagna, Blue cheese crumbled and melted over a delicious filet mignon broiled on a portabella mushroom. I think you get the picture.
It's really hard for me to make a decisive opinion as to which is my favorite or "best". I love cheese almost much as I like bacon and damn Gurl... I'd eat a cat turd if it was wrapped in bacon.
Geez I'm of Armenian ancestry and I always have FETA in the fridge! How could I have forgotten that? I prefer ASIAGO to Parmesan or Romano. It is creamier and shreds easier. I am far less fond of Provolone and in fact I don't think I've ever bought it but there is local sandwich joint named Jersey Mike's that makes a killer Roast Beef/Provolone cheese sub that I am in love with so go figger! Maybe some Provolone is milder smokeywise tastewise.We don't like that liquid smoke taste. We love Muenster. Have you ever tried Limburger though GTG? It seems to me many years ago I saw it displayed in a market but I didn't get close enough to smell it. Your use of cheeses is quite impressive. Thank you for your thoughtful answer and Happy Monday.
My grampa (God bless him) love Limburger and Roquefort cheese. That man would eat that stuff on a cracker while sipping sherry then gargle with Witchhazel to get the stank out of his mouth. LOL
