When you invite friends over for dinner ever serve them something you've never made before or do you rely on the tested and successful?

Why would anyone use anything that was UNTESTED for any reason that people are relying on for solid dependable results? You TEST BEFORE you need to use it don't you? Shouldn't you test it and debug it and verify it BEFORE not bemoan the failure AFTER?
