    Medium rare works for me.

    True story: growing up I never understood the appeal of steak. We sometimes had it (esp. if my family barbequed) but it struck me as relatively tasteless.

    Then, when I was dating my (now ex-) wife, she ordered a steak medium-rare, and I tried a bite. Ohhhhhh!

    It turns out my family had been badly overcooking any steaks that came our way, turning them into borderline hockey pucks (which edible with enough steak sauce, but otherwise tasteless).

    I used to eat my steak "threatened". That's when you hold it up in front of the "fire" and tell it "you could be on there, ya know" before slapping it on the plate (tartare, but without the raw egg)

    These days I stick with medium rare, or even medium, given the way it's raised and handled. Go much beyond medium and you no longer have a steak, just shoe leather.
