I'm smiling and thanks for asking. Much of my absence was absorbed by Jury Duty. Juror, I was. It lasted 17 days. Ugh! Thanks for noticing my absence. This will make me smile all day! :) :)
I do not dislike, detest, or hate (such an over-used word) mayonaise. Still, I would like to answer. I am going to try Bookworm's recipe. It sounds delightful.
Maybe if people would open their tastebuds to new and tantilizing approaches to the spread, they might find a whole new avenue of delight.

Aioli is garlic and olive oil, quite tasty and easy to make. Now with your photo why use Aioli on Sweet Potato Fries. I would use a good Bearnaise instead.
Mayo is eggs yolks and low rent vegetable oil and quite disgusting IMO.
In the days before feed lots and grain fattening was common both were necessary to add fat to a meal for flavor. France and other Nations used sauces etc to accomplish this task as well. Element look look the 5 basic sauces if you are of a mind.

Don't mind aoli but only if I don't have to breathe on anyone for the next few days. Ari excepted; he has never minded the smell of stale garlic on the breath or coming through the pores of the skin.
When it comes to the commercially manufactured stuff, I do hate it, and adding a bit of garlic makes no difference to that disgusting synthetic flavour.
