Everything mommy made was pretty good but she never mastered potato soup. I don't know why she made it that way but my dad loved it. UGH. She basically boiled potatoes and cut them up and added some milk. It was horrible.
I can make potato soup. It is not horrible.
My mom cooked all things and baked all things very well besides that travesty.
My mother was known in the neighborhood as the best baker of all things sweet and wonderful. My favorites of hers were fried okra, fried corn (you yankees call it creamed corn), green beans, and corn bread. She used fresh vegetables, mostly from neighbors' gardens. My aunt lived with us and she made a cornbread casserole that I remember eating until I thought I would pop. It was ground sausage, corn, hot peppers, and I don't know what else. We were poor but always had great dinners......and we sat down and enjoyed them together. This is something people don't seem to do so much. I think it is the only way.
My kids loved pineapple upside down cake. I could make a small one in an iron skillet in no time flat. Other than the sugars, flour, and butter, it was a low-cal healthy dessert. ;)
My mom made great fried chicken too; I hear a lot of people my age say that. I don't fry because I can't stand a greasy mess in my house. I guess I failed my kids. ;) I go outside and fry okra sometimes because, well, one can't live without it entirely.
