    What would happen?  The same thing that happened to the gazillion species that also disappeared from the earth.  The earth doesn't care.

  • Lots of critters would be under much less pressure and would thrive.  Lots of other animals would die, especially the domesticated ones.  Several species would become extinct almost immediately.

    None of which would really matter.  Nature would adjust, natural selection would select and the 'natural world' would in general become much healthier fairly quickly.  Give it a few thousand years and there would be very few signs we were ever here.
