Honestly, I haven't a clue; however, here are some pliable guesses: My Grammie always thought all big dogs were boys. Many people do this. Why? Because bigger means stronger and more protective, supposedly. Another reason may be if it is a "she looking dog." I think this might encompass things like, a poodle, a cocker spaniel and anything that fits in a purse. All yippee and whiny dogs are considered girl dogs. It kinda fits into the "gender generalization" that the big dogs get all being boy dogs. It could be what you named your furry friend and/or the collar type your dog wears. Maybe his little winkle dinkle doesn't hang down where people can see it. Most people don't take the time to stop and turn your dog over and look before addressing you about your pet. And finally, with the collar just mentioned, if you dress your dog up in clothes, chances are, their guesses are made from the attire you put your dog in. If I were you, I would just go with it until you and your dog get to know the person better. Unless you see it has an impact on his/her ego, I wouldn't relieve the truth until it is really necessary. If it is someone you are going to want to know in the future, they will get the drift all on their own. Probably, they will feel really stupid. Until that time, I'd just have it a secret, inside-joke between you and your furry friend. :) ;)
