Are there some days when evenything rolls off your back and other days when you don't take any crap and attack back? Why is that?

Yep.    I have what I call  a "crap sponge".  That "sponge" is able to "absorb" a certain amount of "crap" (be it from people, or circumstances, or whatever) .  I'm usually a very patient, forgiving person, and although my "sponge" is very large, every once in a while it reaches its absorption capacity.  That's when I stop taking crap.  Usually my sponge gets wrung out rather quickly (things happen in life and people have bad days; just take a deep breath and let it go).  However, there are times when my "sponge" is so so saturated that it takes a bit of time to get fully wrung-out.  Those are the times when I wont take any crap from anyone.
I think we're all like this.  Those with large "sponges" are more patient than those with small "sponges".  I also believe that, with practice, we can increase the capacity of our "sponge" and learn to wring it out faster.

My sponge usta be bigger but as I get older Shuhak it is shrinking. So much so that when I see crapmakers heading my way I just avoid them completely. When I don't see them for whatever reason I give crap  back bigly immediately or just ignore sidestep duck and make it a point to NEVER engage with them. Why engage with the crapmakers when your discomfort is their goal? Why give them what they want when what they want will either hurt you or anger you? Unless you are  masochist of course. Thank you for your thoughtful reply. I dunno know though about letting it get so saturated. If it happens a lot that can't be good for you m'dear!:)

You know, I said the same thing.  Some people claim that one becomes more tolerant as they age (insert eyeroll here).  Of course, I'm not sure if my sponge is shrinking or that there's just more stupidity out there these days.

Hahahahahahahahaha! Ya know what? I never ever even once considered that possibility Shuhak! I was taking all the blame upon meself. Mebbe it should be shared with the increased number of stupids out there? It is a VERY tantalizing thought. Thank you for your reply m'dear!
