Vina Dosh ( I know it's misspelled) -  My uncle was Portuguese, and this was my favorite dish of his.
A Cuban dish (my cousin is from Cuba) I believe called Ropa Vieja

I would say just about most everything I prepare now is "ethnic" in that it is nothing I grew up with in the 50s and 60s.  Brown rice and tempura , sukiyaki, kinpira, nabe, norimaki, sushi, pesto,  broccoli rabe, mustard greens, millet, gravlax, chow chow, dolmas,  broth bowls, okonamiyoki, tacos, kasha varnishkes, hummus, curry, gobi aloo. etc.  About the only things I still eat that I grew up with are potatoes and fried fish and seafood.
