The area govt. group that feeds shut-in senior citizens uses a lot of salads when they start to run low on money. Good salads, but gets kind of boring to eat. Normally, they serve a large variety of dishes.
Potatoes, pasta and rice. Soups. One thing I make that is really good and cheap is to boil a whole chicken until the meat falls off the bones, pick the bones out and add a thickener until the meat is in a gravy and serve over mashed potatoes.
Lots of salads, add cheese and chicken or tuna for protein. :-)
