    I don't fry.  I roast potatoes, bake them, or make soup with them.  I love potatoes.

    ANY potato is great.

    Freedom  fries (pommes frites, allegedly invented by the Belgians with credit stolen by the French), the "chip" (fatter pommes frites served by the British, usually with fried fish), chips are a particular favorite (or crisps to the Europeans), home fries with onions and other embellishments like cheese and bacon, "shoestring"  . . . mmmmm! And lets not forget whipped, mashed escalloped, baked . . . even raw with a little salt. There's so many ways to enjoy that lowly tuber.

  • I boil sliced potatoes a few minutes then bake them in the oven for 10-15 minutes instead.   It's my favorite way, except I use yams (not the orange ones), because they are lower on the GI.
