Do you know of any dishes that work well to freeze and reheat?

It's very important that they are dairy free and aren't heavy on hot spices. Really any general ideas or suggestions would be helpful. :) I can usually find ways to alter recipes to make them more suitable for someone with a very sensitive stomach. 

My mom is going to be away for 3 weeks getting medical treatment, and I want to have at least a weeks worth of meals ready when she and my dad get back.

    Anything Italian freezes well, as do most casseroles.  Beef pot pies are good. Fish is good.  All can be made with or without dairy (if you're creative) and all can be made pretty bland.

    You might also take the easy route and buy a bunch of frozen entrees, TV dinners and such.

    You can freeze pretty much anything that is cooked.  I really can't think of much I haven't frozen.  I live alone and make a lot of one-dish meals.  I have dinner and then  I put one serving in the refrigerator and the rest I put into 16 oz containers  and freeze.   Any type of casserole, roasted meats, pasta sauces (I haven't frozen  alfredo though, and don't think I would).  I don't usually freeze vegetables after I cook them because I finish them in two meals generally.  Don't freeze salads or anything with uncooked mayonnaise or sour cream.  Breads and corn bread do great in the freezer.  I use so little butter that I've started keeping the box in the freezer and just taking it out one stick at the time.  Same with cheese; I buy a three-pound block, cut it in 8-10 oz blocks, wrap them and freeze them.
