    Hold your horses, Stu. I'm going to edit, but it may not be as you wish. 

    My intent wasn't to say that I've got plenty more (as in additional) legitimate excuses. I was adding 'more legitimate' as an additional adjective in describing my excuses. 

    She has many, more expensive, shoes. 
    She has many more expensive shoes.

    The commas are unnecessary regardless of your meaning.

    "I have plenty more legitimate excuses" is equivalent to "I have plenty of excuses," so no comma is needed.

    "She has many more expensive (pairs of) shoes" or "She has (much) more expensive shoes" also are statements that don't need commas.

    I'll let you off with a warning this time. Have a nice day ma'am. (Officer tips hat). LOL.
