    For fries I use sweet potatoes.
    For baked potatoes I use russers.
    Yellow and purple are good for stews.

    Except for baked, we mostly use reds and leave the skins on.

    I believe so. Potatoes that are fresh and have green on the skin MUST be cooked well.The skin is toxic.
