who did these jobs before we had illegal aliens?

    "Illegal aliens" always did those jobs, it's just that nobody made a song and dance about it before. Also freed slaves - subsistence level pay was actually worse than slavery for many of them. Slaves were valuable property, share croppers aren't. There was no minimum wage at the time and they'd never handled money, so a very bad deal could seem like a good one.
