Hi Karen~ Typically, in other countries, there are no all-you-can-eat buffets and they don't load their plates up with starches and bland food. The amount of food is not why they are serving it to you. They would like you to enjoy the presentation and the time the chefs took for you to enjoy their art. Another reason is no one likes it when they are stuffed and eaten too much. It is much more relaxing and satisfying when you can enjoy all 7 courses and not just the bread that comes first. It is about enjoying the food and the flavors the have to offer your taste buds. Being stuffed on a bunch of food you take home isn't the dining experience they would like you to have.
