What type of craft/ artisan food should exist, but doesn't?

First, I believe craft/artisan are marketing words to charge more for them.  Artisan means made by hand by an expert. I suppose an expert pastry chef could craft something, but you aren't going to find it at your local Kroger or Piggly-Wiggly. But to answer your question in my usual smart a** way, I would like some artisan possum belly.

Is artisan the new buzz word for gourmet now?

    It's already been done.

    There is gourmet everything now.

    Even gourmet twinkies.
