Why are people squimish about eating organs as if consuming flesh ripped from the bones of animals is better?

The first expedition to the south pole got snowed in. They ate the dogs. They also ate the livers. They didn't know about vitamin A. The liver of a husky contains enough vitamin A to kill a man, so they died of vitamin A poisoning.

Eating organs depends on tribal customs. Some things take more than one lifetime to learn.
