Pretty decent gourmet fudge reicpe. Easy too.

     Awwww fudge!  I will get some great fudge at the local county fair tonight, you know--------- at the same time I take my son to see Ted Nugent.

    I've been making fudge like that for years. The only difference is that I mix the chocolate (good quality chocolate chips, or similar size chocolate chunks) with the condensed milk, salt and vanilla (these last two ingredients are not essential) in a heavy saucepan and stir over low heat until it's all melted. It's a little easier than her method.

    Yada yada yada. She spends the first minute and a half telling you what a great thing she is about to tell you. Then she spends two minutes just telling you about the ingredients. That was where I got bored and stopped it. I can make fudge faster than she can talk about it.

    Fudge (no chocolate)

    Heat oven to 425°F with rack in middle. Pour 1 (14-ounce) can sweetened condensed milk, or one can condensed milk and 1/4 cup sugar, into a 9-inch deep-dish pie plate and cover tightly with foil. Set plate in a roasting pan and add enough hot water to pan to reach halfway up pie plate. Bake milk in middle of oven 45 minutes. Check water level and add more if necessary, then continue to bake 45 minutes more, or until milk is thick and brown. Remove pie plate from water bath and cool, uncovered. Makes about 1 1/4 cups.
