    It's all good. I occasionally throw in a recipe request just to see what people come up with.   Scrambled eggs are mostly boring and can only be good if the eggs are fresh and the cook is spot on.  They are mostly boring actually.  But omelettes are usually more exciting.

    Why choose something that is a failure?  That's why.  I think both can be really good.  Let's not get into an egg fight here now.

    Mix some eggs with anything in your fridge. Cook and enjoy.

    I put in butter, a splash of milk, onions, sweet bell peppers, maybe some garlic, cubed ham and grated cheese when it is almost cooked. I add Tabasco to mine and my wife uses salsa.

    Plain -
    1. Crack two eggs into a bowl. Add one tablespoon of milk (or cream/cream fresh/kefir) in a bowl. Season to taste with salt and pepper. Beat with a fork if you like some yellow and white or whisk till frothy if you like it light and well blended.
    2. Melt butter in a frying pan over medium heat. Pour egg mix into pan. Stir gently with a wooden spoon for 2 minutes or until just set (see note). Remove pan from heat. (I like to cook it on high heat to get varying textures and a few tasty golden or brown edges.
    3. Serve with crusty wholemeal bread and some finely chopped herbs - parsley, dill or chives.

    Variations:
    - sprinkle with dukkah
    - add your favourite cheese into the mix
    - pre-fry some sliced mushrooms, add them to the eggs while they cook
    - sauté chopped onions till caramelised and golden, add them to the eggs while they cook
    - Asian style - instead of salt and dairy - use a tablespoon of water with a pinch of miso or soy sauce, and chopped coriander
