Since I haven't tried them all, I can only guess.

    Maybe these two.

The Asor ... since nobody actually knows what it looked like. (reference in the Old Testament book of Psalms)

    A Sitar (from India)
Murder on the fingers. Strings will cut to the bone.
Takes awhile to get those calluses.
Have to sit on floor...uncomfortable position,
takes awhile to get used to being
    comfortably uncomfortable.

Funny you should mention this.  The one and only dream I've ever had about a Sitar was a couple of nights ago: I picked one up and just began playing it, no problem.  I've never even seen one in real life, nor heard one in real life that I can recall.

Just a guess:  the Harp.  Nothing is marked you just have to "know" where to put those 10 fingers to produce the sound you want.  Seems like a heck of a lot of work.

Bagpipes.  You’d think that after 3 thousand years someone would finally learn to play them!  (they sound like someone strangling cats!)

A nude piano, aka a harp. You have to be a very accomplished pianist before you're allowed to get near one.
