I love potatoes and eat them about three times a week. Seriously. They are a good source of quite a few things but I try to eat potatoes and bananas for the potassium. The example picture is not very appealing to me. I like diced potatoes with butter and paprika, I like garlic mashed potatoes or cheese or both, I like diced potatoes with gravy or just salt and pepper. I also like a potato with butter and sour cream and a sprinkle of chives. My kids loved for me to make potato casserole with frozen hashbrowns. I had been making that their whole lives when one day someone came up with a new recipe for potato casserole....it was mine and I had been making it for years. I stopped when I realize those potatoes had oil added to them. Now you can buy them without the oil. We made one of those casseroles at Thanksgiving. That was the first one I've had since my kids left home.......having a mom thought......how can that be so long ago?
Oh, I forgot about potato soup.....that is a fave for sure.

I don't have a single one - there are plenty. Potato bake with cream, onions, garlic and bacon. Potato salad the way my daughter does it. Barbecued potato slices. Hash browns. Chips (fries to you Americans, but thick cut, English style). Mashed with milk, butter and a little extra sharp cheddar.
