Given that alcohol boils at around 78 degrees C and starts to evaporate at considerably less than that, it there any point to Irish coffee?

The alcohol in the whiskey boils off, right?

    I don't boil it.  Also, I don't really use whiskey; I just use Bailey's in the coffee and add whipped cream.  I must admit I haven't done this in almost 30 years.

    Coffee won't infuse properly at less than 70C (unless you're using instant, which is revolting). Alcohol starts to evaporate at less than that.

    Given that we all boil and evaporate at some temperature or other then what is the point to anything?  Irish coffee, as I recall, is fun.
