My parents had a friend with a small apple orchard - less than a dozen trees. She had an old, wood and cast iron, apple press. She would use apples that had fallen from the trees, after they decayed "just enough", to make homemade cider.
Unfortunately, after her death, her children sold the property to a developer who cut down all the fruit trees.
I don't really like apples cooked but I enjoy caramel apples, apples with peanut butter, apples dipped in any kind of sweet dip like caramel or marshmallow cream with sour cream and cream cheese. Many people like apple pieces dipped in honey as well as apple salads such as Waldorf too (but not me so much). Then there's apple butter and applesauce. You could get rid of 15 lbs of apples in no time and help keep the fam in good health. Apples are very nutritious.
