    Since they have distinct flavors, I don't think can be used interchangeably, unless the eater has a preference for one or the other. I don't believe in 'should' when it comes to flavorings.

    I don't believe they can be used interchangeably in some cases.  I cannot imagine guacamole tasting the same (or better) using lemon juice rather than lime.  Similarly, I doubt veal piccata would taste as good using limes rather than lemons, but that's me and my palate.  To others, it may not make a difference.

    Sometimes, depending on what you're doing with them and also on the genus and ripeness. Some lemons are almost sweet. Slightly underripe lemons of the sourer types can be used in place of lime, if limes are unavailable.

    No, but I have had a Meyer lemon. Given that it's a hybrid (with a mandarin, the sweetest of all citrus fruits), it's absolutely not interchangeable with lime.
