Although I use very little chilli, I do love ginger, pepper and garlic. I also love spices like cardamon, cummin, coriander, ajwain, fennel, clove, cassia, cinnamon, nutmeg and tumeric. Korma is one of my favourites. Also saag paneer, dhaal and samosas. I like to buy or grow them fresh, pound them finely in a mortar and pestle, lightly dry roast them in a pan, and then add them to sauted onion and garlic beofre adding the rest of the ingredients to slow simmer. I make a separate chilli sauce for guests who like more oomph. I'd be very interested to learn one of your favourite vegetarian recipes, Veena.
