Do you add eggs to your mashed potatoes?

My teenage son walked in while I was mixing up mashed potatoes last night and he recoiled when he saw me add the egg. He asked if I was going to cook it after, and I explained that the potatoes were hot enough to cook the egg, and I even checked the temperature of the mix to prove it. Despite the fact that this is how I've made mashed potatoes for the past 15 years, and I learned the trick from my MIL, so it's the only way he's had potatoes in all that time, he refused to eat them.

Eggs make the potatoes creamier and tastier, IMO. Is this how you make your mashed potatoes too?

    Never heard of it.

    I am going to try that.   I can see the allure.

    I add it to pasta a lot when I am not using regular Italian sauce on it.

    Like I will do Romano cheese and salt and pepper and egg and put that in with angel hair and re-fry it in olive oil.

    So, mashed taters is not that far of a stretch.   I'll try it.  Sounds RICH.   The heat of the potatoes will definitely cook the egg.

  • I've never heard of that before. I would have to take your sons approach and not eat. I'll have to stick with using milk and butter for that creamy and yummy taste.

    I've put eggs in my taters when I make tater pancakes, but never, ever, ever....

    You know...a little milk, some cheese and/or greek yogurt works well,  too

    My grandparents had a poultry farm and we had eggs coming out of our ears. I thought we had discovered every possible way to incorporate eggs into all kinds of dishes, but I was wrong.

    Nope, just liberal amounts of cream in those mashed (actually whipped, there's a difference) spuds. But I'll have to give it a try. Sounds great. (Although now that I think about it I seem to remember my grandmother mixing an egg or two into the leftover mashed 'taters when she was making potato pancakes.) I'm guessing it makes them more custard-like? (Eggs added are the main difference between ice-cream and frozen custard.)

    Even raw eggs are not a problem for me. I used to mix up a concoction called "Tigers Milk". It consisted of a raw egg, a tablespoon or two of sugar, a dash of vanilla extract and two cups of milk all thoroughly blended. Mmmmm! Now where did that darn chicken disappear to?

    Interesting. I've never made potato pancakes, but maybe I'll give that a go. I used whipping cream in mine... not a habit, but I happened to have some and figured it was a good use of it.

    I don't think I could stomach the Tiger's Milk, though. I'm not a fan of egg nog either. Something about the texture. Yick.

    LMAO He's 19. He didn't just refuse to eat them, he talked to me like I had gone mad. I posted here thinking everyone would talk about how tasty it is that way. Not one person backed me up. :p

  • I use a half brick of cream cheese cut up in cubes and throw in with potatoes before mashing or whipping... you should try it. Probably go over better than eggs in potatoes with your children ;)

    My younger ones like it. It's the teenager who was difficult.

    What's the ratio with yours? About how many potatoes is half a brick good for? I do plan to try it. :)

  • 6 or 7 potatoes to a half brick. I only just discovered adding cream cheese to mashed potatoes this past April for Easter, so good:)And in your teenagers defence,  I'm an adult and would turn my nose up at eggs in potatoes also :)
