Gardening is very difficult for me and my wife.

Her solution: Plant more plants.
My solution: Remove more plants.
Who is right?

    Get a good rear tine tiller. I have a huge garden and it does most of the work, but it will still tire you out.

    If I tried to use one, we would have to call 911. My back and right shoulder are war zones. Our actual veggie garden is small, so it isn't much work. It the other flowers etc around the fence line and in the front.

    More plants means more work - more trimming, more weeding, more watering, more fertilizing.  Move to an apartment.

    Oooh  I love gardening.. invite me over an I will do it for free :) Lol seriously tho there is no easy answer... lots of plants, if they are the right ones can make less work... fewer or no plants and having hard landscaping would work... but is also expensive.. and if done badly can end up having more weeding to do...  Tough call...

    Over the last 2 years I changed the main part of my garden to have raised beds.. lots of work initially but much, much easier to garden now :)
