Yes.  We have stuffed peppers, stuffed mushrooms, stuffed eggplant, stuffed tomatoes.

    No stuffed peas. Too small.

I have eaten stuffed peppers a couple of times, usually the get stuffed with rice and other vegetables.

I failed to see the point of it. some of the red pepper taste is suppoed to infuse the rest of it but I never noticed that, It just tasted like boiled veggies and that is not my cup of tea (except for boiled potatoes, I like those)

I'm a stuffed pepper guy. Since my home-grown bell peppers don't always get big, I buy a few from a nearby farm market known for their big peppers. 2 for a dollar. Then I stop at a village market and buy 2 lbs. of Indiana grown beef. I mix in some rice at about 50/50 ratio and add a half cup of diced, dehydrated onion.  Then I buy locally canned tomato juice and tomato sauce and mix it into a squishy mess, stuff the peppers and heat it in a crock pot thingy at a medium setting for a few hours, while spooning the juice over the peppers every half hour or so.

  • I was going to say tomatoes, but alas ... they are a fruit.
I was going to say eggplant, but alas ... they are a fruit.
I gave up before I thought of potatoes ... Darn! :))

    Nice answer. :))

  • They are fruits...and also vegetables. Some vegetables are fruits. Vegetable is a culinary term, not a botanical one.

I do it regularly too but usually with chicken salad and the whole thing on top of shredded lettuces.  Such a nice cool meal.

  • When it's hot outside, they make a nice, light meal.  We had a lot of them when we lived in Tucson
