    Asparagus, beets and kidney beans, canned is okay. Tomatoes are a fruit so they don't count. Everything else, fresh or frozen. With Spinach or silverbeet, grow your own and cook it immediately - those are inedible an hour after being culled.

    Fresh produce. Occasionally I will open a can of veg chili or soup.  But we shop as much as possible at organic farms and farmers markets.

    Yes.  In our area they have winter farmers markets as well with over-wintered or stored root vegetables and greenhouse-grown greens and some other vegetables.
