It's a good thing I'm not Greek. I'm a New Englander. All the of our Greek restaurants run by Greeks spell them "Gyros" and they all use lamb which is the true, traditional method for preparing this dish.
Sure, you can use chicken, pork, beef, but it isn't a traditional Gyros
