Any farm-made (as opposed to factory-made) cheese: Havarti, Swiss, Colby, Gruyere, Manchego and most Cheddars, Parmesan, Chevre, Feta, Limburger, Provolone, Gouda, Port Du Salut, Brie, Bleu Cheese and Edam. Stilton, Asiago, Camembert, Gorgonzola, home-made curd cottage cheeses, etc.
Unprocessed cheese is cheese in its natural form without the addition of emulsifiers or preservatives and with the whey removed in the cheese-making process.
Most cheap cheeses are not cheese at all.....they are made from fat ,oil and chemicals and most all pizza chains use processed cheese....you can tell the dodgy ones as they drip fat off them while they are still piping hot.. Melted cheese solidifies quickly as it chills at normal room tempretures
But the correct answer is that unprocessed cheese has the whey removed and contains no preservatives, salt, and other goodies.
