    I’ve never seen That stuff in a grocery store, restaurant or know anyone who eats it. I only know about it from Americans on the internet thinking that’s what Canadians consider bacon.

    Yes.  It's actually cured loin and comes from the pig's back rather than belly, where regular bacon comes from.  In Canada it's called back bacon (I just read that....didn't know before now).
