Why say it? I doubt you really know any Jewish people. The things I can say about them are that they are very family-oriented, work hard, and are gracious. All of my closest friends are Jewish. I don't know the population numbers in my hometown but our schools' students are over 30% Jewish. All of our kids went to temple and church with each other and celebrate some of the fun traditions of both Christmas and Hanukkah.
Don't be that person who clumps a whole country's people or an entire race together with a trait. That is ignorance run amok.
I'm not politically correct either. I'm smart though.

To be fair I have seen Americans get VERY miffed at the stereotypical, 'Americans are fat' jokes.. I think actually the last time that happened was on here!
On the other hand I have seen *many* Jews laugh and joke about the stereotypical joke about them and money..
All through the middle ages Christians felt that moneylending was sinful, and so they left that profession for the Jews. That resulted in a few (very few) Jews getting incredibly rich.And several progroms have been started over that. In such progroms ALL jews get punished for the sins of the very few. By now Christians have started reading the bible differently and will happily lend money against interest, by habit Jews often get blamed for their greed too.
