What are the best methods to have pancakes come out plump and fluffy (like the restaurant kind)?

    Mine come out fluffy.  I think the secret (for me) is using self-rising flour and adding a little extra baking powder (not soda).

    I'd say make them thicker in a smaller pan? I don't know as here I always make them BIG and flat... I guess a small cultural difference?

    Right... so a large based frying pan, skillet or whatever would facilitate a large flat pancake.. A pan with a smaller diameter base would mean that you could pour the batter and thus develop a deeper layer of mixture. Does this make sense?
