I hate to admit it because both are the worst for you physically, but white bread and american cheese make the best grilled cheese. Served with tomato soup for dipping is the perfect touch.
I have found the trick of making grilled cheese sandwiches is covering them. The amount of heat and oil is important too. When I started making grilled cheese, I used butter on the bread facing down and as it cooked, I added butter to the Up-side and flipped them. I have sense learned (and spray cooking oil has become available,) heating the pan FIRST with a little cooking spray works better. Another thing I learned is not to make the pan too hot but hot enough as to when you splatter a little bit of water, it sizzles. When you put your sandwiches down, cover them and turn the heat down just a touch. When they start to steam just a little, spray the side of bread facing you and flip them. Re-cover and start the tomato soup. Make it 1/2 water, 1/2 milk. Taaa-Daaa! A quick. not so nutritious but definitely delicious lunch! :P!!
