I haven't, but a friend of mine, on his way back to the Naval base, saw a deer on the side of the road and pulled over. It was still alive but badly injured. He pulled out his .357 and killed it, then hauled the carcass back to the base. He slaughtered it, wrapped up the meat, froze it and took it home the following week. He had 8 children and didn't waste anything.
I tasted venison once upon a time Ele and it tasted so gamey. It was VERY unpleasant. It there any way to cook out that gaminess? I never tried it again. So the deer had been hit by a car then and was suffering? It was a kindness that your friend extend to the deer. That's why they shoot horses with broken legs isn't it? I have heard others also say it tastes 'gamey'. I don't know what that means. To me it tastes like meat. My son-in-law bags one or two deer a year and gives me some sausage. It's delish. My wife won't eat it because it was made from deer meat. He also gives me a roast or two to make jerky. Again...wife won't eat it. ALL MINE.
I describe "gamey" as an off putting taste. Rather like unpleasant medicine. Heavy and almost noxious and an odor also accompanies it that is rather unpleasant. Perhaps the problem was in the particular type of venison I had. For example some folks think they dislike lamb when all they have ever tasted is mutton so they don't have a clue how delicious and tender spring lamb can be. Maybe what I tasted was a very old very tough piece of meat from a very old animal. Has your wife ever tasted it? If so perhaps she had the same taste experience I did and maybe your tastebuds just like it. Tastebuds vary all over the place. Thank you for your reply Ele. I love jerky and I would try it Ele since I've never tasted a jerky I didn't like. I've had the spicy peppery kind and teriyaki kind and the jalapeno kind. You name it I've tasted it. Beef, turkey, pork, chicken all taste good. In fact I can eat an entire package at one sitting It is addictive tastewise. Too bad it's so dam*ed expensive. I have never seen venison jerky but it is probably a special order thing. I know I'm setting myself up to be called a jerk. I've been called worse! There is brand of jerky called Arissa's or something like that. I bought two packages..medium size. One was spicy and one was Teriyaki. Jerky is hard for Jim to chew. I ate both packages in the same day. Don't tell anyone. Our secret okey dokey? Now I don't even buy it because I know I am a slave to it! :) Thank you for your reply.
My father ate muskrat, but he trapped them for the fur. I never asked him how it tasted. I've had froglegs and wild boar. I don't know how they were killed. I knew a hillbilly woman who ate possum. I heard it was really greasy.
I think possum was mostly the kind of road kill "granny" cooked but I can't be sure. I always thought it was very funny if kinda yucky that folks would run over something, take it home, cook it and eat it. I don't like greasy food. Well unless it is buttery and then bring it on! I don't think I've ever tasted frogslegs but I'm told they have a very delicate flavor and are highly regarded by some gourmands. I think of Kermit the Frog when I think of frogslegs (which is very rarely) and don't think I could get past that. Of course I eat pork and never think of Miss Piggy. I wonder what that's all about? I have ate a squirrel that we ran over. We also hit a deer once. It was during deer season. We were on the way to my father in laws for my husband to go hunting. He got out and killed it. We got our deer on the way to the hunt. I also don't care for deer meat either. It takes like beef that has been in the freezer for a year to me. It does make good sausage and jerky....those are seasoned more.
So can you compare the taste of squirrel to a meat I'd be familiar with m2c? Who does the skinning on the deer? Are their experts you would take it too for that? I expect a squirrel is small enough to handle though I'd not want that job. I'm kinda squeamish. I wouldn't do well on a farm. I could never go out to the chicken coop, select the one I was going to cook, chops its head off and skin and prepare it for cooking. On the other hand if I grew up in that environment I probably wouldn't think anything of it. What you grow up with is familiar of course. Thank you for your helpful reply and Happy Monday to thee! :)
Squirrel tastes like squirrel....it really has its own taste. We bread it and fry like chicken. You can pay a butcher to process your deer or do it yourself. My husband does it. You hang them to drain the meat then remove the skin. Then butcher the meat.
Really? Wow! So you have a place just like in the movies where you can do that? Is the texture of squirrel like chicken sweetie? I mean chicken can be very tender or very tough depending on its age and how you cook it. As for the butchering part do you have a room dedicated to that in the garage or a separate building for it? Have you ever killed a chicken and cooked it on your own m2c? My mom could do it without a problem and my grandmother was a whiz at it. But she was from "the old country" and that was a way of life for them. Thank you for your reply m2c! :)
The legs especially can be very tough. The other parts tend to be tender. We have had chickens in the past but I have never done any of the butchering. We are planning to get a coop built next month so we will have chickens soon. Now, we have rooster only because a granddaughter was given one. The area he is in is not suitable for a regular chicken coop. It would be too hard to get the eggs.
Well sweetie if you prepared squirrel and invited me over for dinner I would certainly taste it. I might just love it! There are some things I probably wouldn't try though. I have a problem with internal organs. I've had tasty calve's liver. My mom was a genius in the kitchen. But sweetbreads and things like that I don't think I could. Also things like snake. I don't know if anyone eats it anywhere in the world but I think I'd have a hard time with it. BUT it wasn't until I was in my 40's that I tasted escargots. In garlic sauce. With awesome sourdough bread. I thought I died and went to heaven. They looked like shriveled up mushrooms and the texture was rather the same. I tried one because I didn't want to look like a coward and would you believe I ordered my own dish of them? I LOVE escargots! So ya never know. Thank you for your reply m2c.
Lol. When I was pregnant about the only thing I could keep down was cereal. So when I would eat I used a big mixing bowl to put in. My Mom called it my Jethro bowl.
