I don't understand why people would even eat the ones with pits. Then they have to find someplace to split them. Why bother.

Black olives are green olives turned black ...they are picked green and cured in huge vats with a brine and lye solution which makes the olives oxidize,turning then black and changing the texture of their flesh.....
