Tell them that not only is my vaccine card 100% real, it's also bigger!

Excuse me?  I think your mind's in the gutter.

Nothing.  No one should be forced to have to get an experimental shot for a disease that has an over 99% survival rate.  A shot neither prevents the recipient from getting nor spreading the disease. Or a shot that has the side effect of death.

Offer to buy or trade for it, some day it might become a rare collector's item.

Maybe ask why he/she is bragging about it.

In this particular case, a radio report from the Los Angeles. California area revealed that in anticipation of the county-wide proof of vaccination mandate that took effect this past week, an underground network of people who are charging up to $100 for the fakes, which people are buying in droves in order to apply for jobs, keep the jobs they already have, get into public venues such as restaurants, sporting events, etc. Some of the people interviewed either bragged about how much money they’re making, how easy it is to forge the cheesy cards in the first place, or how easily they have fooled others with the fake card they bought.

None of that explains why they would brag as opposed to quietly getting away with it.

You’re killing the messenger. I certainly don’t defend either their bragging about it or their reasons for bragging about it.

Seems like a lot of work, when one can just claim a religious exemption and nobody would know different.

Many places are not excepting the religious exemption.

Nothing, unless they also bragged about doing things that require one. In that case, I'd alert the relevant authorities.

I'd cough or sneeze in their face, then inform them that I had COVID but since I had the vaccine I wasn't suffering any symptoms.

It wouldn't have to do anything. Karma is working overtime for dummies like this. However, too bad they are probably taking a bunch of innocent people with them to the grave.
